This is a lovely recipe for banana bread which
uses "over ripe" bananas....
9 oz self-raising flour
2 tablespoons wheat germ or oat bran
½ teaspoon baking powder
3 tablespoons butter or olive oil
6 oz sugar
6 ½ oz cottage cheese or natural yoghurt
8 oz mashed very ripe bananas
Few drops vanilla essence
Mixed spice if desired
Preheat oven to 180C/350F. Grease an 8”x6” loaf tin.
Sift flour, spice, wheat germ (or oat bran) and baking powder into a bowl.
In a separate bowl, cream the butter, sugar and cottage cheese (or yoghurt) together. Add eggs, one at a time, beating after each addition. Add vanilla essence.
Fold in flour mixture and the mashed banana. Pour into tin.
Bake for 1 hour. Turn onto wire rack to cool.
Now for the angel wings...
